I had so many delightful ideas for this blog challenge (in line with this original challenge), but I’m a changed woman and a responsible mum now, so I made mushrooms instead.
As I may have mentioned, my husband and I are Banting at the moment, so our breakfasts are all about cheesy, creamy goodness. This is how I made this particular one:
2 large mushrooms
White cheddar, grated
Bacon (for two people)
1 stick celery
1/2 clove garlic
Butter. Lots of butter.
Preheat the oven to 200 degree Celsius.
Cut the stalks out of the mushrooms, then lightly fry the mushrooms on each side for about two minutes.
Try to scoop some more of the mushroom out once it is cooked to give it a real cup shape. Place the mushrooms in an oven-proof dish.
Open one egg into each mushroom.
Bake in the oven for about 10 minutes (or until the eggs are ALMOST as hard or soft as you like them).
In the meantime, fry the rest of the ingredients (except the cheese and cayenne) in lashings of butter or coconut oil.
Once the eggs are almost done, take them out of the oven. Add the bacon mixture to the dish, cover everything with cheese and grill until the cheese turns brown.
