They say that the most satisfying of all foods are the ones that crunch in your mouth. And who am I to question ‘them’? I will take any scientific data (actually, I’d even accept a Facebook status) that puts muesli in a positive light because, well, muesli is delicious.
Try this easy recipe to make yummo muesli bars that can be slipped into lunch boxes or backpacks.
3 cups rolled oats
1/4 cup caster sugar
1/2 cup honey
1 cup Rice Crispies
1/2 cup chopped dried apricots or dates
1 cup sultanas
1/2 cup desiccated coconut
1/4 cup pumpkin seeds, sunflower seeds or sesame seeds
Preheat oven to 180°C.
Grease and line a baking tray with wax paper.
Mix the honey, sugar and butter in a pan over a medium heat (until the sugar has dissolved into the melted butter), stirring regularly.
Increase the heat and bring to the boil. Cook until the syrup thickens slightly, which should only take a couple of minutes.
Remove from heat.
Combine the rest of the ingredients in a large bowl.
Pour the hot syrup into the dry ingredients and combine.
Spoon this mixture into the baking pan and press down firmly to ensure that the mixture sticks together.
Bake for 15 to 20 minutes. The mixture should be a beautiful golden brown colour.
Allow it to cool before putting it into the fridge.
Once it is well chilled, cut it into slices of about 2cm wide and 6cm long.
